I do this too - I’ve found the concept of “precrastination” to be very useful in curbing these desires to over prep too early
(;tldr - slow down to give your brain space, make to do lists but don’t execute tasks just yet)

I definitely do this, but I realize it can be excessive (especially when I get the kids to a scheduled event a half-hour early), but I prefer it to the alternative.
